Anyone else a beet fan? Not only are they earthily delicious, but they also offer a plethora of benefits. Beets are rich in antioxidants, help blood flow and oxygenation, reduce blood pressure, help fight inflammation, help the natural detoxification process, and enhance athletic performance and recovery. Beware of the possibility of beeturia– red tented urine– do not worry, it is not blood and you are not dying.
I just wanted to share my souper easy recipe I made for dinner tonight. All you need is the ingredients and a blender. Serves 4.
Beet and Cauliflower Soup
Ingredients
1 can (15 ounce) sliced beets
1/2 head of cauliflower
4 fluid ounce water
1 lemon, juiced
2 ounces goat cheese
1 tablespoon of olive oil (I used chili infused olive oil)
1 teaspoon dried basil flakes
1 teaspoon dried onion powder
1/2 teaspoon hatch chili powder
4 teaspoon sunflower seeds
Directions
Place beets, cauliflower, water, lemon juice, goat cheese, olive oil, basil, onion, hatch chili powder in blender (I used a vitamix). Blend on high until completely smooth. Pour into soup bowls and top with 1 teaspoon of sunflower seeds. Enjoy and share with others!
